Hummus (2 × 540 mL cans chickpeas)

Ingredients:

  • 2 cans chickpeas, drained (reserve some liquid)
  • 4–6 tbsp olive oil
  • 4–8 tbsp aquafaba (or water)
  • ½–1 tsp salt (to taste)
  • (Optional but recommended: 2–4 tbsp lemon juice, 1–2 cloves garlic, ¼–½ cup tahini)

Steps:

  1. Add everything except extra liquid to the food processor.
  2. Blend, scraping down sides as needed.
  3. Add aquafaba/water 1 tbsp at a time until smooth/creamy.
  4. Taste → adjust salt, lemon, etc.
  5. Blend 30–60 sec more for extra smoothness.

Done.
